Hi Dan

I am a professional bartender in the UK (I work freelance for private parties, 
do training and corporate/brand stuff) Firstly, I wouldn't worry about your 
memory. I can't remember my own cocktail recipes, let alone anyone elses! When 
you start making drinks, that is when you will start learning recipes and it 
will come naturally (if it doesn't, then just write them down on paper!). 
Secondly, do as much bartending work in as many places as possible(from cafes 
to hotel bars to clubs)preferably paid, but if you have no experience it may 
be tricky. Most bartenders start as barbacks - tough, but a great way to learn 
and very rewarding if you are a good one. 

Good luck - it is a great profession!

P.S. read as much about cocktails, spirits and alcohol as possible!
