My advice to bar backs is to develop a routine. Check juices, check fruit,
check glassware, check for drinks to be cleared, stock, (whatever sle your
duties entail), then repeat. Don't get lazy, just because the last 5 times
you checked there was enough OJ, the one time you don't is when it will be
empty.
