Actually, it's the same principle as that of the cement mixer.  There are 
certain kinds of acids, that when mixed together cause problems.  Lactic acid, 
the acid found in dairy products, and citric acid, the acid in citrus fruits, 
such as limes, do not mix.  The same can be said for phosphoric acid, the acid 
in soda.  These acids cause the lactic acid to curdle.   
But that's just a guess.
