Yeah, overfilling is easy to do, because the glasses are so large.  The large 
curve of the glass and narrow lip are to keep the warmth and aroma in.

I know my standard practice, and I think it is for most people.  Is to fill 
the snifter to the point where if laid on its side, the brandy will touch the 
lip of the glass without spilling out.
