Remy Martin is a brand of cognac, not a champagne, despite being called "fine 
Champagne cognac". The "Champagne" refers to name of the area within the 
Cognac region where the grapes were grown.

Congacs are brandies, so you can use Remy Martin in any recipe that calls for 
brandy (grape brandy, that is).
