Hard apple cider is made very similarly, except you would use a strong
container that would not let the bubbles out, and would not burst under
pressure. I used to to make soft ginger ale and root beer using yeast, and if
it did not ferment too long, the drinks would be bubbly but not significantly
alcoholic. Check a local homebrew place around you or look it up on the net
for a homebrew recipe, Sodas take about two days but a hard cider I think
would take a week to a month for fermentation.
