The key is to make sure the top layer is a high proof liquor/liqueur. The
higher the proof the easier it is to light. I think the liqueur needs to be
at least 80 proof. And 80 proof is not easy to light, so you may have to warm
it first. If you warm any proof liqueur/liquor first it is easier to light.
Be careful, people have been severely burned on their face, because the drink
was still on fire. One way to make sure is to put your hand near the top of
the drink slowly if you think it is out. I blow out the drink and then put a
baked clay dish on it to make sure the flame has been is smothered.
