

For a frozen bellini I would blend crushed/cracked ice with the peach schnapps
or the medium ripe peach. You could cut the peach up and freeze it in the
freezer so you would not have to use ice (but you may want to add some peach
juice or schnapps). After it is blended I would put it in a class and add the
Champagne and lightly stir. To make a frozen drink I would try a ratio of 1
oz of crushed ice per 1 oz of ingredients. If it's too thin blend with more
ice, if it's too thick add a little ingredients and for next drink blend with
less ice.

1 oz. Peach Schnapps
3 oz. Champagne
Pour the Peach Schnapps into a champagne glass (if you have one) or a cocktail
glass and add Champagne.

In the original recipe, created around 1940 in Harry's Bar in Venice, white
peaches and Italian sparkling wine, Prosecco, should be used. If you can find
them use them, if not, regular peaches and champagne will do.

Ingredients:
1 oz Light rum
1 oz Dark rum
1 tblsp Passion fruit syrup
2 tsp Lime juice
Mixing instructions:
Shake all ingredients with ice, strain into a cocktail glass, and serve.

Ingredients:
1 oz Vodka
1 oz Gin
1 oz Light rum
1/2 oz 151 proof rum (optoinal)
1 oz Amaretto
1 oz Triple sec
Grapefruit juice
Pineapple juice
Grenadine
Mixing instructions: Pour gin, rum(s), amaretto, and triple sec into a tall
hurricane-style glass with ice. Add equal amounts of grapefruit juice and
pineapple juice until almost full. Top with grenadine to taste.
Creator/contributor's comments: This was from a book I read somewhere. This
drink hides the alcohol taste well. Dangerous! -- Substituting cranberry juice
for grapefruit juice also creates an awesome drink.
