There is not much on the Internet about Emmets Irish Cream Liqueur, however 
you should be able to use Emmets in place of Bailey's Irish cream or in any 
recipe that calls for an Irish Cream liqueur.

IRISH COFFE

2 oz. Baileys or Emmets Irish Cream
4 oz. hot black coffee
1-2 tsp. sugar
1-2 tbs whipped cream

Add sugar to coffee and stir until dissolved. Add Irish cream and top with 
whipped cream. Do not stir—drink coffee through cream.

Funky Monkey

Blend half a ripe banana
3/4 an ounce butter scotch schnapps
1 ounce Emmets Irish cream
1 ounce Leroux Créme de banana
1/2 ounce Cruzan dark rum
1/2 ounce of simple syrup or one table spoon of sugar

Add ice, but be sure that the liquid level is slightly higher than the ice 
level. Blend until smooth
