having traveled in Brazil for about 3 months I can tell some you of the venders
use solid sugar,most use fresh cane that the smash with a mallet and throw in 
the jar.Some press the cane first and then use the syrup

one product that is close and available in the south is sorgum.or sourgum syrup

since a lot of places in Brazil don't have electric power readyily available
you don't see a lot of blenders in bahia.They smash the fruit and ice when 
available with a mallet or macahte and throw in in the jar and shake.
