Be professional. Do everything you are asked (within reason) quickly,
quietly, and completely. Keep a happy disposition. Listen to everything going
on around you. Keep your eyes moving, don't fix them on one object. Learn to
stay ahead. After a while you will be able to anticipate what the
bartender/customer/server/manager will need before they ask for it. If you do
that, you should have no trouble learning to tend bar and moving up through
the ranks.
Dennis covered the basics. Learn where the glasses and things go after
you are done washing them. ALWAYS put everything back where you got it, or
where it belongs. I personally, am ruthless on barbacks that waste my time.
The more time I spend pouring drinks and working the crowd the more money we
both make. I tip my barbacks thirty percent, but they earn it.

       Good luck,

              Fillup:)
