I didn't even think of using a whole horseradish.  In fact, using horseradish 
from a jar would probrably have water in it and possibly preservatives in it, 
too.

Like you said using whole horseradish, chopped up, you could leave it in until 
you had the desired strength and then pour the vodka (filtered) back into its 
bottle, and then reuse the horseradish again, by just pouring into the jar 
fresh vodka.
