When making cocktails, you shouldn't be using any chilled spirits. This would 
prevent the ice from melting properly during the stir/shake process, and 
"water" is one of the key ingredients in a properly made cocktail.

As for which spirits/liquors should be chilled for drinking "straight", it 
depends on the taste of the drinker. As I indicated previously, chilling isn't 
really advantageous to bringing out the flavors of any drink, it only helps in 
"hiding" flavors. But the spirits/liquors that are commonly chilled are Vodka, 
Jagermeister, Aquavit, and of course beer and white wine. ...there might be a 
few that I left out of that list...
