I have a book called, "The Book of Cocktails" by Jenny Ridgewell. $12.00 to 
15.00 paperback.  It' the best I've seen.

It has very good sections (with pictures) on Garnishes, Frostings, Flavoful 
Toppings, Ice, and Accompaniments.

On garnishes it shows how to peel lemons, limes and create fancy ties etcetera.
How to overlap pieces of different fruits and create different shapes.  Use 
cookie cuters and make fancy and unusual designs in fruit peels.  How to 
decorate using coconut.  Decorate with cheries and flowers, etcetera.

It section on creating different colored ice and different ice shapes is good.
